Eating One Handed

They're are many products available to help with cooking one handed. However there is far less to help with sitting down to enjoy the meal, as cutlery to be used one handed seems to have much scope to be greatly improved.

I am about to undertake my final year project in Product Design Engineering at the University of Glasgow, and would like to do some research into this.

There are many different reasons someone might require to eat one handed, from short term things such as having broken an arm, to much more life changing things such as having suffered a stroke. I am very interested to hear from anyone who is going through or has gone through any situation in which they have had to eat with only one hand, and would greatly appreciate any insights I can gain to help me design a product that I hope will be useful and worth while.
