I went to a p.i.p appeal on Thursday and I've received a letter saying that I qualify for personal independence and mobility from 25/01/2017 to 24/01/2020, does this mean my money will be back payet from 25/01/17.

The summary decision should give you the date the award is from. Technically the money is not backdated (backdating refers to money paid for a period before your date of claim) but is arrears back to the date of claim. So, yes, unless specified otherwise, you should get arrears back to the date of claim.
