Lag (latency) in a game

Just in case anyone can help as I know we have some gamers here
I have a weird problem that only occurs with one program, a game called World of Warcraft
Basically once in a while, maybe once a day, my latency/ping will go up from the usual 20-30 to about 100-200 so doesn't make the game unplayable but makes it unpleasant.
Nothing else on the computer is affected, every other program is fine and even doing a ping test returns nothing unordinary
The only fix is to restart my whole computer, after which it will work again for a while
The only thing I can think (as a total novice so may make no sense) is some file or script, which isn't present after a restart, occasionally decides to load up which affects the latency?
I'm on a Mac if that matters and don't have anything like antivirus getting in the way.
Any ideas?

I'm not sure about that @Albus_Scope but I have decided to take a screenshot of all the running processes now, while it's working, and will compare that with when it's not working!

It could be other software looking for updates or automatically downloading them? Or a memory leak perhaps? I'm not great with macs, I'm 100% PC, so I'm not 100% how macs do things.Albus (he/him)

I'm a PC gamer too and not sure I've ever used a Mac so can't advise but I know how frustrating lag can be!!! Hope you get it sorted
