My wife receives New Style ESA. I have just started received Carers Allowance for looking after her. Will this affect her ESA payments

No it will not. Are you claiming any other benefits as a couple? Perhaps Universal Credit?

My wife claims PIP (she is currently receiving Radiotherapy after chemotherapy for breast cancer

Then it will have no affect. You must make sure that if you work your earnings are not more than £151/week.
Have you used a benefits calculator to check entitlement to Universal Credit? As it's a means tested benefit you will need to claim as a couple. If you have capital of more than £16,000 you're excluded from claiming.
