I received a text on the 16th to inform me I had been rewarded my PIP. I called them for more info but they said I had to wait for the letter which was sent on the 15th!… When do you think I will receive my backpay and does the letter really take 2 weeks??

Yes the letter can take up to 2 weeks.
Backpay often arrives ahead of the letter. It's possible you'll receive the money next week.

Heya @Frecklefacevick and welcome to the community. 😊
I've always gotten my backdated pay through before the main award and before any letters had arrived, so it was quite a nice surprise. 😆
