How do you prove someone is caring for you for more than 35 hrs a week when they live far away away from you ?

Hi,
The short answer is, you can't.
Generally people aren't asked to provide hard evidence of caring though. Just a short explanation should be good enough. I assume they either spend a lot of time contacting you by phone or text, or travel to your place regularly?
