Soup! Big saucepan, veg already cut up from supermarket, red lentils, cannellini beans and veg stock cubes. Blend with a hand blender at the end of you want to…

Tray bakes can be good - just lots of veggies and you can add meats or fish depending on your taste, pop on some herbs and spices and roast in the oven. Just be a bit careful overloading the tray if your good arm isn't used to holding heavier things one-handed.
If you buy the pre-cut veggies in packets that can help if you're not able to grip a knife to cut things.
My supermarket do frozen bags of casserole veggies that I pop in an oven-safe dish and bake with some stock or gravy mix and lentils or beans, that can be tasty and hearty and doesn't take much prep ☺️

I still have very limited movement on one side so for me I need ideas. I am after 33 months now off liquid foods and so need recipes. Food food food yum food.

I have cerebral palsy and have limited use of my right hand. Meals I can create with one hand are essential.
I make stir fry using preprepared veg, noodles and sauce. Adding diced meat if required.
I cook a piece of fish with Mediterranean veg or sweet potato fries.
Sausages and Mash. (I buy the mashed potato you can cook in the microwave) with gravy made by just adding water.
Hopes this gives you some ideas.

I would recommend investing in an I would air-fryer and a slow cooker. I wouldn't recommend mug cakes or mug recipes these are awful.

Hi Jonf, one easy favorite of mine is microwave scrambled eggs: crack an egg into a mug (or use liquid egg for simplicity), add a splash of milk, cheese, and pre-chopped veggies if you like, then microwave for about a minute, stirring halfway. No pots needed, and it's ready in a flash!😊

Thanks! I was thinking about buying an air-fryer recently!
