    Hi Jessie, how are you doing?

    I have another batch ready for today's heatwave down South.

    This one is made from fat-free strained yoghurt, whole fresh raspberries, bananas and only 2 tablespoons of honey. I wasn't sure whether fat was necessary but it tastes delicious and very refreshing again (the peanut butter was less so - perhaps it's a winter ice)

    I identified my first fruity concoction as a gelato not ice cream at all. This one probably is too.

    Thanks but I'll stick with sugar/honey as the only 'clean' sweetener is out of my price range - the dried leaf from the Amazon. I'm on a restricted diet and can't risk side-effects.

    3 cups raspberries : 1 cup fat-free strained yoghurt

    1/4 cup milk

    banana

    2 level tablespoons honey/sugar

    vanilla essence

    Zap the raspberries, banana and honey/sugar in a food processor. Mix yoghurt, milk and vanilla essence in a cold bowl then add fruit and blend. Needs an hour or two to thaw unless that's just my freezer. Commercial ice cream won't stay frozen in my freezer so I'm very happy with these creations.

    Lining and covering the baking tin with greaseproof paper helps it set quickly and reduces ice formation.

    Bluebell, I must warn you about blackcurrants and blackberries - my tongue turned purple/black ๐Ÿ˜† luckily no-one else had to see it but your husband and even Sam would probably notice.
