Hi I already receive the standard PIP & mobility.
I heave recently been diagnosed with sleep apnoea using a CPAP machine, and also a hearing aid now added to everything else that's going on...should I update these new health issues and if so will my payments stop until they decide if anything needs to be changed.

If you report a change you will be sent a new health questionnaire and likely have a new assessment.
While this goes on your existing award will continue. Once a new decision is made the new decision will overwrite your existing one. If increased it should be backdated to the sate you reported the change.
However take advice before reporting a change. Unless the changes are likely to result in an increased number of points which is sufficient to carry your total over the threshold for an increased award there is no point putting yourself through this.
