Welcome to the community @waight79, as someone with Crohn's disease don't worry about sound "ewww". I've heard, seen and dealt with similar or worse. In fact I'm known as the "poo person" in my family to talk to if someone has bowel problems.
Edit: I want it to be clear I am NOT a medical professional, this is just been my personal experience with my own bowel disease. If you are in a lot of pain you should be seeing your doctor to see what they can do to help if you have not already.
So what you're describing sounds quite a bit like Paradoxical Diarrhea. For a quick version, a stool gets impacted (stuck) in your large bowel and the diarrhea builds up behind it and eventually seeps around it. This of course causes a lot of pain as your bowels are being stretched and also gives the timeline of what you described, water, hard, watery.
It took me a long time, years, to properly figure out what caused my Crohn's to trigger. Fibre is a big issue and can cause blockages for me.
Have you had any success writing a food diary and seeing how your body reacts to different foods?0
