Does the Post Office need the original PIP tax exemption form or will a print out suffice ?
(I have read that some PO's refuse a self printed copy) !
What else do I take with me ? MOT and V5C .....?
Do I need to fill in a V10 prior to applying for a change in tax class ?

It's the certificat of entitlement you need (it's not a form), not the PIP award letter. No idea if a copy will be accepted. You don't need the V10 form.
What to take to the Post Office
You need to take:
- the (V5C) registration certificate (log book) in your name, or a new keeper supplement (V5C/2) if you’ve just bought the vehicle
- an MOT certificate that’s valid when the tax starts
- Certificate of Entitlement
- Insurance Certificate for vehicles registered in Northern Ireland
