You can't be sanctioned for leaving work with good reason. A health condition is good reason. However, you shouldn't really resign from work without first getting some expert advice. Are you entitled to SSP from your emploiyer?
Have you been through the work capability assessment for UC?

You can report your health condition to UC by reporting a change of circumstances. You will need to provide a fit note for this. However, if your earnings are more than 16 x NMW you will not be able to be referred for a work capability assessment unless you’re claiming a disability benefit such as PIP/ADP or DLA.
Are you entitled to SSP from your employer?

Why would I need a fit note if I'm handing my notice in to my employer

If you report a health condition to UC then you will need a fit note for this. Without a fit note you will not be referred for a work capability assessment.
