Universal Credit queries

Hi everyone - I’m new here and this is my first post.
I have 3 questions…
- We have been on UC for 4 months and just submitted our latest details for our assessment period. We submitted them on Friday evening. Our capital has reduced by about £4300 since last month as we had to replace broken kitchen appliances at a cost of £1200, made some additional payments to our mortgage of £2400 and bought my daughter a puppy for £700 as a “mental health dog”. On Saturday morning we had a message from UC asking us to attend a meeting to show evidence of our money and savings and to provide 4 months worth of bank statements. Do you think they’ve asked for this because of the large change in capital in one month?
- I have been dismissed from work on grounds of ill health. I have just been paid 2 weeks in lieu of notice plus 4 days pay for unused holiday. Will this count as earnings? If so, it will mean we won’t get any UC next month because we will go over the earnings threshold. Will that close our claim altogether meaning that we’d have to start a fresh claim all over again?

3. It’s possible I might get a settlement from my employer for unfair dismissal. If so, would this lump some be disregarded as capital for our UC claim?
