🥑National Guacamole Day - 17th September 🥑
Now this is an exciting day to celebrate!! I am a big fan of guacamole.
Guacamole was first made by the Aztecs in Central Mexico between the 14th and 16th centuries and its name deriving from the Aztec word for "avocado sauce"!
To celebrate this day, I thought I would share my homemade guacamole recipe, this usually feeds around 3 people but absolutely no judgement here if its less for you…guacamole is delicious.
Ingredients
- 3 ripe avocados
- 1 lime, juiced
- 1/2 small red onion [finely chopped]
- 1 tomato [diced]
- 1 clove garlic [minced or garlic granules for less intensity!]
- Fresh coriander
- Pink salt
- Chili flakes
Instructions
- Scoop avocados into a bowl and give it a good mash to your desired consistency (personally i like a chunky guacamole
- Add lime juice, onion, tomato, garlic, coriander and as much salt and chili as needed.
- Mix it all up, taste test and adjust to what you like
- Serve immediately, I personally enjoy it with some tortilla chips

@Mary_Scope:I love poached eggs but yesterday I had them pan fried in extravirgin olive oil with a slice of focaccia bread and smashed avocado. It was truly delicious! Today I think I will scramble with asparagus and shallot and accompany with guacamole and Sardinian "pani guttiau" which is similar to tortillas, what I have at home- a "pani carasau" - which is a crunchy flat bread from the med Island baked with extravirgin olive oil and salt🍒🥑🍳

Ooo yum! That Sardinian bread sounds soo tasty, making me hungry!! I quite like mushrooms pan fried with garlic with avocado but I know mushrooms can be a bit controversial!😄
