I think you're getting a bit ahead of yourself here. First thing to do is just wait and see whether DWP do consider any of your spend to be Deprivation of Capital. As you don't have any proof, then it's just your word against theirs, so could go either way at the moment.
If they decide that some DOC has occurred, then they will calculate how much the overpayment is for each month. They will expect you to repay the whole overpayment. But is not as bad as it sounds. It's around £25 a month for £2000 of excess savings.
The overpayment is to UC, because that is the means tested benefit. They may give you the choice to repay in full, or just take a small amount out of your UC payments over the following months.
If your savings were also over before you started UC, then that would be a separate DOC issue for income related ESA to deal with. UC will only deal with it back to the start of your UC claim.
