please could you advise me if I resign from my job would I be paid any outstanding holidays annual leave ? Or is it paid if my employer finishes me after my career break has ended? Hope this makes sense

If you resign, your employer still has to pay you for any holiday you’ve built up but haven’t used. That is a legal requirement.
The same rule applies to anyone leaving a company for any reason, whether you are resigning, being let go or moving on to a new job. Any outstanding holiday you have accrued must be paid.
Your employer should be able to tell you how much holiday you’re owed, and the payment will be added to your final pay.

Don't resign, go off sick and let them sack you.
