Ending phone contract because my airtime/device plan are paid off today?
Above.
I've had an airtime/device plan on a Google Pixel 7 from O2 that I've been paying off since 2022, however, I think it's due to be fully paid off today, so if I was to pop down to Meadowhall or Crystal Peaks to the EE shop this weekend, would I be able to sign up for a new SIM only contract as I recently got a new phone?
Answers on a postcard and I am aware of Google.

@SheffieldMan1976 Don't see why not, I'm about to be in the same situation next month, but I'm Switching to sim only online using my 02 app making certain i get to keep my old number as changing its a right pain ,having to inform others of that change. Hope you get sorted.

I've previously switched to a SIM only when my contract ended for a bit although that was with the same supplier (EE). It is possible to keep your current mobile number when changing providers though. I've found this which might be helpful @SheffieldMan1976 😊

You have to ask the previous provider for a PAC (Portable Access Code) to switch the same number to another provider, I've done it loads of times as I've been with most of the big name providers.
