Well, I don't want to make this even more complicated but I think you actually need a SAR rather than FOI.
A SAR is for personal information. FOI covers more general requests.
You can reply to that email again. State that you need a record or your UK entry and exit dates. And say between which dates you need to know. (For example, from 1st January 2020 to 31st December 2024).
There is a different email address for SARs which you can try if you don't get anywhere with the first one.

Unfortunately our esteemed government aren't known for having great communication skills, they only send communication letters or emails if/when they want summat.

No. Neither of those are departments. They are legal rights that you have to ask for information.
I don't think that reply was asking you to choose a department. The staff will do that when they understand exactly what information you require. If they can't help you using the original email address, then try the SAR email address that I posted above.

S.A.R. means a Subject Access Request. You are asking the Home Office for data held about you on those travel dates. You are the 'subject' here. You want information held about you.
