One handed meals

Does anyone have any recipes for cooking simple meals when you can only use one hand? My son has hemiplegia and relies heavily on ready meals as we're finding it difficult to find recipes that he can use. Any suggestions would be welcome.

Here's my recipe for 3 bean & spinach stew - but it involves opening tins - so maybe use of electric can opener would help with that. Can be adapted as necessary; hopefully possible for one hand cooking:

A couple more suggestions this morning:

For cooking anything in a pan in boiling water use a chip pan basket so they don't need to lift a hot pan. You can also use bags of pre cut veg or use bags of frozen steam veg.

I remember one of our volunteers suggesting stir fry, if you buy the diced meat,then once it's in the wok it's a case of shimmying it

Thank you, we tried out the three bean stew last night and it was very tasty! It was also easy for Michael to cook so will be added to our favourite recipes.
If anyone has any other suggestions, that would be great.0 -
Have you tried companies like Wiltshire Farm Foods, or Oak. (can't remember the name). I order online and have them delivered twice a week. My mother has to have a special diet and she rings her orders in. Not much help I'm afraid in making meals - I have too many accidents.0

I would have thought it is the cooking equipment that needs to be right not the recipe. Get the equipment in place then start experimenting. The one handed chef on TV has always impressed me.0

I find that French peelers are excellent when prepping vegetables one-handed. (They can be bought at all shops that sell cooking equipment).1

One handed myself, ready chopoed veg is a godsend especially the stew packs throw in slow cooker with diced beef lots if thyme, basil bit of sage or whatever you oxo cubes and turn on, can leave on low and have next day too.
short sleves a must, use every gadget available buy ready prepared fresh ingredients and have a go!
Much better than over salted dry ready food.
Ready grated cheese on toast, ready chopped onions and worseter sause nice too.
