For the last two or three weeks Alexa is taking a full 2+ minutes to play a podcast from Anypod.
Is this an issue with Alexa or is it the Anypod platform?

I don't have Alexa, so I've never used AnyPod, but it seems more likely that it'd be the platform. Is everything else functioning well?
Perhaps you could try using another platform to see if that works, and then you'll know if it's your device or not? -
Wait until Alexa suddenly starts telling you something totally random in a totally silent room or just randomly starts laughing for no reason like she was doing for a while last year - she'll totally freak you out

I've had an Alexa for a couple of years, it's funny because on WWE there's a female wrestler called Alexa Bliss, they announced her name when I was watching a recording and my Alexa device popped up lol.
I also bought my Parents an Echo Show (Alexa that does videos as well as music) for Christmas, in fact I'm still paying it off at £12 a month.

@MrAllen1976 I have an echo show I have all my house cameras linked to it so I can ask alexa for the name of the room the camera is in and alex shows me I love it
