I might be biased as I work for a charity, but I found charities more understanding of health needs when I was searching for jobs. Perhaps there is a health-related charity out there that might need some admin support? Your experience as a nurse could be really useful.
Sometimes it can be good to make a list or chat through with someone what your skills are and what you like doing, that can help narrow things down a little.
