Now this is an exciting day to celebrate!! I am a big fan of guacamole.

Guacamole was first made by the Aztecs in Central Mexico between the 14th and 16th centuries and its name deriving from the Aztec word for "avocado sauce"!

To celebrate this day, I thought I would share my homemade guacamole recipe, this usually feeds around 3 people but absolutely no judgement here if its less for you…guacamole is delicious.

A dark orange bowl that is full to the top of bright green guacmole and purple tortilla crisps around the outside

Ingredients

  • 3 ripe avocados
  • 1 lime, juiced
  • 1/2 small red onion [finely chopped]
  • 1 tomato [diced]
  • 1 clove garlic [minced or garlic granules for less intensity!]
  • Fresh coriander
  • Pink salt
  • Chili flakes

Instructions

  1. Scoop avocados into a bowl and give it a good mash to your desired consistency (personally i like a chunky guacamole
  2. Add lime juice, onion, tomato, garlic, coriander and as much salt and chili as needed.
  3. Mix it all up, taste test and adjust to what you like
  4. Serve immediately, I personally enjoy it with some tortilla chips

Also I could not post this iconic video and song on this day The Guacamole Song by Dr Jean 😄

I've been eating a lot of avocado recently, so this discussion really resonates with me. 😋

That sounds delicious @Cherry70! What sort of eggs did you have with your avocado? I was always a fan of a poached egg with avocado😄

@Mary_Scope:I love poached eggs but yesterday I had them pan fried in extravirgin olive oil with a slice of focaccia bread and smashed avocado. It was truly delicious! Today I think I will scramble with asparagus and shallot and accompany with guacamole and Sardinian "pani guttiau" which is similar to tortillas, what I have at home- a "pani carasau" - which is a crunchy flat bread from the med Island baked with extravirgin olive oil and salt🍒🥑🍳

    @Mary_Scope 🍳🥑 Mushroom, Avocado & Egg Love: A Deliciously Healthy Trio! 🍄🧄

I’ve always loved mushrooms, especially oyster mushrooms sautéed with garlic and parsley—they’re earthy, savory, and just irresistible. Recently, I read about how amazing avocado and eggs are for your health, and I realized: why not combine them all?

Here’s why this combo is a nutritional powerhouse:

    1. Healthy Fats: Avocado is full of heart-healthy monounsaturated fats, which help your body absorb important vitamins.

    2. Protein Boost: Eggs provide high-quality protein that supports muscles, brain function, and keeps you full longer.

    3. Nutrient-Rich: Together, they offer a spectrum of vitamins and minerals—vitamin E, B12, folate, potassium, and choline—for brain, heart, and overall wellness.

    4. Blood Sugar Support: The fat from avocado and protein from eggs slow digestion, preventing blood sugar spikes.

    5. Anti-Inflammatory & Eye Health: Avocado has antioxidants and anti-inflammatory compounds, while eggs provide lutein and zeaxanthin for your eyes.

    Quick & Delicious Idea:

    • Sauté oyster mushrooms with garlic and parsley.
    • Toast a slice of whole-grain bread and mash some avocado on top.
    • Add a perfectly poached or fried egg.
    • Top with your mushrooms, a pinch of chili flakes, and fresh herbs.

It’s creamy, savory, and so satisfying—not to mention, a nutritional win!

💡 Have you tried combining mushrooms, avocado, and eggs before? I’d love to hear your variations!🍒
