I couldn't think where to post this.
Can anyone share some good recipes that they like.
Or some good books on the topic.
Ideally nothing cooked unless it can be purchased already cooked, or can go into a microwave.

Chopped salad
Cous cous you can buy this and just add hot water and it swells and is ready
then add chopped cucumber, tomatoes, spring onions, peppers, sweetcorn, radishes, any salad vegetables
and add some feta, or avocado, or chicken or tuna
i also like a feta salad
cos lettuce chopped, with cucumber red onion, tomatoes, olives and feta.
you could buy a cooked chicken and add any salad vegetables you like
to dress salads you can add cider vinegar and a teaspoon of extra virgin olive oil.
Rocket is delicious dressed with sundries tomatoes and Parmesan and a little oil I actually don't add oil to this but it's so tasty!! -

Hello @whistles Sorry about this must have missed this post. Just heard @Victoriad asking any way few more to add.
AUBERGINE COUSCOUS SALAD
You will need bowl hot water
knife to cut tomatoes
Aubergines in jar of olive oil Anti Pasti
Feta in Oil cubed Jar
Couscous enough for one measure out
Stock cube crumble in make up to cover couscous
Cherry tomatoes punnet to halve
Mint to roughly chopped
Lemon juice. bottle
1.In a bowl add measure out couscous add stock cube crumbled in herbs just a few leaves of mint lemon juice drops cover boiling water.
2. Add when flaked up couscous after ten minutes cherry tomatoes mix in halve.
3. Add Aubergines drained and cut up and feta from jar and mix together slowly.
4. Toss in Mint.
CHICKEN WRAPS WITH SALAD
Cooked chicken shredded
Salad bags of your choice
Dressing homemade or from a bottle
Homemade Mayo 1 teaspoon
Horseradish from a jar 1 teaspoon
or Dijon Mustard from a jar 1 teaspoon.
Bag tortilla wraps
1. Shred chicken into a bowl add dressing mix leave
2. Lay salad into wrap
3. Add chicken on top close over wrap
TURKEY AND HAM SALAD
Bag salad
Fruit bowl Apples Pears
Walnuts Pecans any nuts
Turkey and Ham packs deli meats
Look for smoked
Dressing Mayo 1 teaspoon
Natural Yoghurt 1 teaspoon
Honey squirt
Lemon juice bottle
Mix together bowl
1. On a plate the bag of salad
2. Add diced sliced fruit
3. Add nuts and meat lay on
4 Drizzle on dressing.
HAM AND BEETROOT SALAD BOWL
Cooked beetroot diced sliced
Any deli meat or cooked chicken
Any bag salad
Dressing equal quantities' of Mayo Greek Yoghurt
1 teaspoon
Olive oil I teaspoon
drops lemon juice bottle
1 In a bowl put enough salad Use a pasta bowl be ideal
2.Make up dressing in a bowl
3. Add diced beetroot to pasta bowl top with whatever you wish to use. Ham, Chicken etc.
4. Drizzle dressing over.

Hello @whistles Understand you can use a microwave. Look at Tinned Pulse like in Italy they have Cannellini and Borlotti Beans.
These can be added drained rinse under water using a sieve. Then into microwave bowl for a few seconds.
Then mix into any fresh herbs and lemon juice and olive oil.
This is one I use all around the year
ITALIAN BEAN SALAD
Any tinned bean like Cannellini or Borlotti
Any vegetable like Aubergines, Peppers. Zuchinni use Anti Pasti jars drain use the oil dressing.
Herbs Parsley or Basil
Lemon Juice bottle or fresh
1. Add beans drained rinse under water using sieve. Add to microwave bowl warm through.
2. Drain Anti Pasta Jar mix into Beans
3. Mix up herbs add in Basil or Parsley. Use others like Coriander or Mint.
4. Dressing oil from the jars plus olive oil and lemon juice
5. Serve this with Chicken cooked or deli meats.
6. I added in Beetroot diced in Winter. Already cooked.
Please can I suggest get a folder make up. Put it all recipes suggestions ideas and then you will not forget
