Well for obvs reasons big parties are a no at the moment, but if you kind of invite people in your "support bubble" the Karaoke's always a big hit.
Get some Beers in, a few cans of Pringles and that, sorted!

Honestly I would wait until you can have a proper party and have a belated one exactly how you want it

I think you should be ambitious and try to safely do all of these things... only joking A family Zoom quiz or game night is always good fun. I'm not sure if you've ever played the Jackbox Party games but they always make for a super fun evening.

@Ross_Scope no tell me more about that game. Curious now. To answer your other question I turn 25 in March. Also thinking about the idea of dancing and having poker too. -
