National Barbeque Week!

With the weather getting warmer and sunnier (hopefully) and it being National Barbeque Week we thought we would talk all things grill!

We have some great tips from our very own @thespiceman just to help make that summer treat even tastier! The Spiceman recommends keeping it simple with marinades: 

For steak use olive oil, red wine vinegar, lemon juice and salt and pepper. You can also use a touch of balsamic too. 

If it’s an Italian flavour you seek, try this rub. Use chilli flakes, ground coriander, fennel seeds with oregano and salt and pepper. 

BBQ is great for experimenting with different herbs and spices! You can always use the sauces and condiments that you prefer. 

If that hasn’t already whet the appetite here are a few BBQ facts to get that sizzle started:

BBQ & at-home eating & entertaining is now the UK’s No.1 summer home leisure activity, with three out of four households now owning some type of BBQ grill! 

BBQ Fact 2 

In 2018 the UK the tied for equal first place with German as Europe’s leading BBQ nations, hosting approximately 135 million Barbi’s each! 

BBQ Fact 3 

Once male-dominated BBQ’s are now becoming much more gender-neutral with women accounting for 46% of all Barbi occasions, whilst men are still tangling with the tongs, they have slipped by 6% over the last three years to 54% in 2018. 

BBQ Fact 4 

The move towards vegetarian and vegan food choices has also naturally evolved into the BBQ and at-home alfresco eating market as well, with over 31% of all BBQ’s now including either a full or partial vegetarian or vegan option.

    Can’t wait for summer to come. I love barbecues and picnics too. We are planning a barbecue dinner this weekend for some friends with wine and cool drinks. I’m getting married this weekend too. Instead of a traditional wedding dinner we decided to celebrate with the guests in the garden of the pub we booked for post wedding dinner.

    Hello @Richard_Scope   As I added a few ideas for very one.

    Thought give you some more if that helps .

    Any steaks take out of fridge twenty minutes or more before adding to the grill.

    Allow to come to room temperature.

    Use trays and oven foil containers for marinades of steaks.  Add marinades add steak coat and leave.  Around twenty minutes or longer.

    Then to grill.

    Zip bags are ideal for Chicken Drumsticks. Slash the skin. Add to a zip bag and then add any seasonings or marinades.

    Use Olive oil not Extra Virgin.  Add Lemon Juice. Use a bottle you can buy a lot easier than squeezing lemons.

    Close bags leave in the fridge to marinade.

    Have in stores.

    Onion Garlic Granules, Paprika,  Smoked Paprika,  Worcester Sauce, Tabasco,  Tomato Ketchup,  Brown Sauce,  Mango Chutney,  Dijon Mustard, Horseradish, Mayonnaise.

    Red Wine Vinegar.

    Lemon lime juice bottles.

    Jars Pesto. Red and Green ones.

    Fridge Greek Yoghurt.

    From any of those make various marinades, dressing, rubs.

    You can buy of course ready made but the salt content in some of these are astounding.

    Half the fun is making your own marinades and rubs.

    I have done so for various meals I have done. In previous post.

    Mention a few here again use every time I make something.

    CHILLI SPICE MIX

    Teaspoon of each  Cayenne or to taste.  Paprika, Smoked Paprika, Black Pepper, Salt, Onion and Garlic Powder.

    Use that with Chicken or Pork .  Add Lemon Juice and Olive oil.  Coat meat.

    Those who like Fish  use this one.

    FISH SEAFOOD HERB SPICE MIX

    Onion or Garlic Powder, Dried Parsley,  Oregano, Fennel Seeds, Black Pepper, Salt,  Lemon juice, Olive Oil 

    Add to Salmon wrap in tin foil and on the Grill.

    A simple salad no lettuce.  I use a Pasta grain called Orzo.  You cook this like Rice looks like Rice but is a Pasta.

    Add to boiling water salted a portion of Orzo.  In the saucepan you can add Peas or Broad beans from the freezer. Drain and cool down naturally.

    Add to Zucchini sliced diced either fry off Olive oil or have raw. Use also Artichokes drained from a jar.


    PESTO SALAD

    One Teaspoon of Pesto Red or Green

    One Teaspoon of good Mayonnaise

    Dash Lemon juice and Olive Oil mix in a bowl whisk.

    Add drained Orzo.

    Plus any veggies from the Orzo saucepan you may have added.  Plus anything else.

    You could use as I have added or Carrots or Celery.  Peppers diced up.  I buy Anti Pasti jars.

    These are vegetables in Oil for bread and served with Deli meats like Salami .  Use the oil for dressings. Many are oven roasted. Great standbys.

    Good with BBQ Meats and Fish.

    To mix marinades or spice mixes use a spice mill or use a bowl.

    Hello @Antonia_Scope   Good to hear.  Remember to be health and safety aware doing anything like a barbecue.

    Look at keeping a folder to guide you.  With information and advice.  I do this myself for anything like recipes.

    Thanks @Richard_Scope for this.  @thespiceman the BBQ tips are great so many thanks and I enjoy reading your recipes too as I enjoy cooking very much.  I tried one of your chicken recipes before.  Really nice, but probably not as nice as you would make.  :smile:  I love going to friends' BBQ's and used to have one myself, but had to throw it out as it was old.  My husband also doesn't like the taste of barbecued food so haven't been encouraged to buy a new BBQ, but I will yet!  :   @April2018mom, Congratulations on your forthcoming wedding!  I hope you have a magical day!  :smiley:  x

    Just a humble gent of the community trying to help those with meal times. ideas and simple recipes.

    A meal does not have to come in a box and covered in plastic.  Ping ping food.

    Never had a microwave meal make my own. Never had a take out either.

    Except fish and chips only thing have. Guess what not very nice. 

    Please have a look on the WHICH website.  Has a lot on Barbecues and what to buy.

    Always here for anything I can give ideas and food solutions.

    Hi @thespiceman,
    You are very welcome.  Your recipes are great and really helpful.  I look forward to trying more out.  I know what you mean about microwave food, not the best, although I am very guilty of having microwave meals on occasion so trying to get away from that now.  Also my husband isn't in to cooking really, although will do it for me if I am in pain and can't.  He is much happier with something that is whacked into the oven or microwaved.  I am currently trying to get him away from this, a work in progress - lol!  He spent several years living on his own before he met me and so think it is habit with him!  :blush:  We don't eat a lot of takeaways as too expensive.  Good for you for staying away from them all.  You sound as though you eat really healthily with good fresh food.  I will take a look at the WHICH website for BBQ's so thanks for that.  I look forward to reading your next few recipes.  Happy cooking!  Nice chatting to you.  @Ails  :smiley:
