What to do with coconut syrup

I cleared out my cocktail making ingredients today and gave away lots of alcohol that I won't be using.

However I am left with a large bottle of (non-alcoholic) coconut sugar syrup which I used to use for making a certain cocktail.

I don't know what to do with it. I purchased some pineapple juice and have been adding some to that to make a non-alcoholic piña colada but looking for other ideas as pineapple juice I can only drink in moderation as it gives me indigestion.

Any inspiration welcome, be it food or drink.

    You could use as a syrup to drizzle over a cake

    Could also drizzle it over pancakes or waffles for breakfast.

    It's not really a thick syrup for drizzling over stuff, it's more of a runny syrup that you mix into things

    I guess could maybe add some to a cake sponge mix

    It will work if you bake cake then while warm **** holes in top and pour syrup over it should be thin to do this

    Yoy could mix some lime juice in ir for coconut and lime drizzle
