Hello every one this is a Ragu a tomato based sauce .
Using the vegetables Aubergines, Peppers and Zucchini . Tinned Cherry Tomatoes with some spices. Using dried herbs and using diced Chicken or Turkey.
Colourful and cheap to make. Any left over better next day any vegetables left over can be used to make a sauce for Pasta.
Either blitzed up in the blender or used even as another recipe.
Doing that now Pork with Borlotti Beans with Potatoes do that one later. In slow cooker right now.
These are great to make especially this cold chilly weather and we antibacterial foods and anti - toxident foods to heal and protect us from any infections . This is one such dish.
INGREDIENTS
You will need one pack of diced Chicken Or Turkey Breast.
One Onion, One Aubergine, One Red Pepper, One Zucchini diced and sliced.
One Tin of Cherry Tomatoes.
Carton of Passata with herbs and garlic 500g.
One teaspoon of Italian mix of herbs
A pinch of sugar or One teaspoon of Tomato Ketchup. I use this has sugar herbs, and seasonings.
Paprika one teaspoon and dried Chilli half a teaspoon .
Optional Fennel Seeds and all Purpose seasoning. I use All purpose seasoning in these sorts of Ragu sauce the spice herb mix useful addition to the stock cupboard.
One teaspoon of each.
Fennel Seeds are used in dishes like this for digestion and aids the stomach often a useful tip.
METHOD
To a freezer bag add Chicken or Turkey. All Purpose seasoning add in and seal shake and leave a few minutes.
Stock pot add olive oil add diced vegetables and colour again a touch of All purpose seasoning.
Please note I would put in Aubergine seal colour then remove as it gets soft and can turn to mush, I do this all the time. Use a slotted spoon to remove and leave. Use a bowl.
Rest of the vegetables, add Meat from Freezer bag colour medium heat and with spices, dried herbs and chillies add Passata Carton cover.
Lower heat and add sugar or Tomato Ketchup.
Add back in Aubergine and tin Cherry tomatoes just simmer gentle.
Around thirty minutes serve.
Make sure hot and cooked through, taste seasonings add more if have to.

Hello @66Mustang Hope you enjoy. Quick cheat went on line TESCO do all the veggies frozen in a roasted format with Basil and Cherry tomatoes.
As with all these recipes buy the bag on my shopping list add in more herbs, or add more Peppers.
Can add to an pan frozen or do what I do defrost first boiling kettle drain and add at the end.
I always add frozen veggies at the end already cooked.
Aubergines good to have but if not into chopping, dicing and find it hard to do, use something like I have stated a frozen bag.
Nothing wrong in that.

Did you know you can buy all your favourite health products from AMAZON.?
Buy in mutiples or packs lot cheaper than TESCO.
Also added advantage next day or after delivery.
Do you want to carry lots of big packs of health products and kitchen ones around or use on line.
Items run out we all do. Kitchen towels and Toilet tissues expensive supermarkets. Other such as hand wash, plus men's toiletries buying.
Enough probably for a six months. AMAZON do a scheme you can subscribe to . Make a plan to have five items delivered you use all the time. The time of your choosing, worth a look. Saves worrying.
Last shop bought over £40 cleaning, household.
AMAZON under £100 you may think that is a lot but. Kitchen Towels and wipes. £20 for about twenty packs of three. Those big one Regina.
Toilet tissues the posh ones 56 rolls again £20.
So on bought anti bacterial sprays pricey,in supermarkets bought a pack of six £10.
Big ones.
I might put this on a post.
