How Do you update your username on here?

You can't do that yourself. You will need to send an email to the scope team and ask them to do that for you at community@scope.org.uk
A member of the team will respond sometime tomorrow once they start work. -

I literally just emailed them and I had an automated responce to say that they might not be able to help out with that. -
I've known them change usernames in the past.
