@66Mustang In terms of texture it's pretty much chicken. Its flavour is also more similar to chicken than say, duck is.
But what makes the difference is it's much juicier than chicken. I mean, think how tasty goose fat potatoes are. Now imagine chicken but it's basically infused with goose fat, that's goose. It's much richer than chicken, certainly filled me up more quickly! We've only ever done it the once, over 10 years ago now, and I still remember it.1 -
@Jimm_Scope ohh that sounds very delicious...it sounds quite fatty? I am a big fan of fatty meats but most of my family prefer the leaner meats.1

It is basically fattier chicken yes. Also quite a bit larger. Very good, also we didn't need to buy goose fat that year (we did just incase). So many juices came out during roast, we made a lovely gravy and it went into our potatoes, and the meat was still juicy!2
