    I think it's long weekend leftovers and a bit of a free-for-all from the fridge for us!

    I made some egg fried rice for my tea last night. Simple, but always tasty.

    Salmon salad sandwich sounds very summery - and quite posh @Sandy_123 :)

    Something along the same lines for us, i.e., fishy! Tuna mayonnaise jacket spuds. 

    Not the most enthralling of teas, but tasty when topped with a far bit o'butter as well ;)

    Also good - Tuna cheese melt on a crusty baguette. Have you tried that?

    @Caz_Scope it is posh as its red salmon but was a gift, well received. 
    I love jacket spuds but like lots of butter on then the toppings. Not had for awhile

    Chicken burgers with bacon and melted cheese , lots of burger sauce in seeded brioche buns , with tomato and lettuce in
