Hello @Chloe_Scope   Thought I share some more recipes.  Every one thinks you need Rice or Chickpeas or Lentils with Curry.

Not so these are ones I use with other grains and even Pasta.

Using may I add something different than the usual meats.

SAUSAGES WITH CURRY SAUCE AND COUSCOUS.

You will need the following.  Good quality Sausages. I look for the ones with Chilli in them or exotic types.  Two per person.

Your favourite Curry Powder or Paste.

I used a Balti Paste with this one. So many choose one you like.

    Used one tablespoon .

Onions Frozen or fresh diced up.

    Carton of Passata.500g.

Couscous to make up.  Boiling kettle. For my self used 50g of Couscous but adjust for numbers.

Any vegetables to go with this. Frozen Peas, Green Beans.  Peppers are good.

    METHOD

Fry Onions oil any rapeseed in a pan . I use a Kurrai or use a sauté pan

If using Frozen defrost boiling kettle pour over and drain add to Pan..

Add Curry Paste mix with Onions and a touch of water.

    On a medium heat.

Add Sausages fry and coat in Spice mix.  Add Passata cover bring to boil and simmer gently till Sausages cooked through.

About twenty  minutes.  If too thick add more water or you could add a Tin of Coconut Milk half a can.

Serve with Couscous... You could use Bulgar Wheat or Quinoa.

Great this with those hot dog buns add a portion of Curry Sauce and a Sausage.  Halloween not far away.

MEATBALLS AND CURRY SAUCE WITH PASTA.

You will need any ready made Pack of Meatballs. Used Turkey, Beef or Lamb.

Onions, frozen or fresh add diced.  Defrost to a bowl boiling kettle and drain.

Your favourite Pasta Shape used Penne.  Used a handful.

Your favourite Curry Powder or Paste.

I used Korma for this one. Have used Garam Masala or used Tikka Paste

    One tablespoon.

Tin of Coconut Milk. Half a tin might have to adjust.

    METHOD

Fry Onions Rapeseed Oil Medium Heat.

Fry Meatballs colour add to a pan  Medium Heat.

Add a Curry Paste or Powder. Touch of water and the Coconut Milk .

Bring to the boil simmer.  Twenty minutes till Meatballs are seared and brown.

Put Pasta on. Needs to be boiling salted water.

Timings if it says ten minutes do this for nine on the Packet going to finish this in the sauce.

Have a cup when draining underneath to use for any of the Sauce if too thick. Or remove a ladle of Pasta water to the pan you are using.

Drain add to Curry Sauce and mix.

Serve with anything like Peppers if you wish to .

Anything you like Mushrooms or Zucchini or Carrots.

    Different ideas.

    Thank you every one.

Hello @Chloe_Scope   Thanks every one kind comments much appreciated from the my heart.

I wanted to add I buy Gnocchi . These are made from Potatoes and Flour. Useful as alternative to Rice, Chickpeas or anything else such as Lentils.

    Had this for lunch.

GNOCCHI WITH SPINACH IN A CURRY SAUCE.

Any Curry Powder or Paste. one tablespoon

One Onion, Frozen or Fresh diced up.

    Portion of Gnocchi.

    Passata small carton.

Spinach frozen... Used comes in cubes frozen two of those per person.  Defrost in the microwave on high a few seconds add boiling water drain well.

    METHOD

Onion in a little oil to a saucepan on a medium heat with Curry paste or Powder.  A touch of water.

Add Passata might not need it all. I used half a carton adjust for number simmer and leave for a moment to cook adjust timings did this around ten minutes to fifteen minutes.

Put Gnocchi on boiling water salted.  Medium large sauce pan will do. Will come to the surface drain and add to Curry Sauce pan.

Microwave portion of Spinach . Drain well and add to Curry Sauce Pan warm through.  Another five minutes.

    Great, simple light lunch.
